Meet Mark & Peggy Carollo of Simma's Bakery

For more than 30 years, Simma’s Bakery has been creating cheesecakes, wedding cakes, pastries and so much more. These treats feature the finest-quality ingredients and are baked by dedicated, highly trained pastry chefs, many of whom have been with Simma’s for more than 20 years.
Current owners Peggy and Mark Carollo say their mission “is to continue to be that small, family run bakery on the corner with a focus on quality and customer service just as Simma demanded when she started the bakery.” At its heart are original, time-tested recipes, although many new sweets have been added to the mix. While Simma’s has changed hands over time (passed from Simma to her daughter, and now to Mark and Peggy), many of the bakery’s employees and its operations have changed little since 1979. In fact, the Carollo’s note that the bakery’s award-winning cheesecake recipe has remained unchanged over the years — and is a secret recipe known to only a select few.

A trip to Simma’s, located on 68th Street in Wauwatosa, reveals the bakery’s recent expansion. Its larger retail area offers an increased product selection. And as a result of the expansion, it will be much easier to keep up with the ever-increasing orders of wedding cakes, cheesecakes, cakes and pastries.
Working with hundreds of brides and grooms each year was a driving force behind the expansion. This gave the bakery necessary, dedicated space for personalized, one-on-one meetings with Simma’s experienced wedding consultants, making it easier to assist couples when planning their special day.
To design your own Simma’s cake, you may bring in photos that illustrate your ideas. Plus, you can count on a consultant to guide you through many delectable choices, including award-winning cheesecake and divine yet conventional cake that may be dressed up with mousse, fresh fruit and even liquor fillings. While the traditional cake is still the go-to for brides, others request a sweets table of mini pastries, cupcakes and sheet cakes.
